神經(jīng)氨酸酶也稱唾液酸酶(EC 3.2.1.18)。神經(jīng)氨酸酶負(fù)責(zé)催化唾液酸與糖蛋白之間糖苷鍵的水解形成游離的N-乙酰神經(jīng)氨酸,而游離的N-乙酰神經(jīng)氨酸在N-乙酰神經(jīng)氨酸醛縮酶的作用下裂解產(chǎn)生丙酮酸。此酶可與N-乙酰神經(jīng)氨酸醛縮酶、乳酸脫氫酶、丙酮酸氧化酶一起檢測(cè)唾液酸的含量。
